This is essentially a chicken curry recipe that uses a special blend of spices and also has potatoes cooked in the gravy. This recipe can be traced back to the colonial times in India. The letters under British Raj used to reach different post offices by horse back. Dak Bungalows were circuit houses along the postal route for the administrative officials to spend nights.

There was a saying that the caretaker started cooking it as soon as he heard the sound of horses signifying that the sahib or an official was coming.

Chicken Dak Bungalow Recipe:

(Serves 4)

Ingredients

1 kg chicken

1 cup Yogurt (curd/Dahi)

1 cup finely chopped onions

1 cup finely chopped tomatoes Mustard oil

1 tablespoon Ginger Paste

1 tablespoon Garlic paste

2 boiled potatoes cut in cubes

4 boiled eggs

Dry Masala Kashmiri mirchi

Cinnamon sticks

Star Anise

Cloves

Cardamom

Salt

Dhaniya Power

Turmeric powder (haldi)

Red Chilli Powder

Akkha Daniya

 

Method

Step 1: Clean the chicken and add it to a large mixing bowl, add curd, lal mirchi powder, dhaniya powder, haldi (turmeric) powder, 2 tablespoon Mustard oil, Ginger and garlic paste. mix these well and leave for two hours to marinate

Step 2: While the chicken marinades we start on the masala, in a large pan, Roast (bhuno) the dry masala Elichi, Cloves, star anise, cinnamon sticks, kashmiri mirchi, akkha dhaniya, once roasted add it to a blender with little bit of water and grind it to a smooth paste.

Step 3: Heat mustard oil in a pan, add the cube cut potatoes and shallow fry them till slightly golden brown. Next Add the boiled eggs to the same oil and shallow fry till golden on the outside.

Step 4: To the same hot mustard oil, add the dry masala, Elaichi, cloves, kashmiri mirchi, cinnamon sticks, mix it and add the chopped onions. Once the onions are translucent, add 1 cup finely chopped tomatoes and mix it well. After the tomatoes have blended in with the onions, add 1 spoon of turmeric (haldi) and mix it. then add 1 t spoon dhaniya powder and 1 t spoon red chilli powder. Mix it well.

Step 5: Now add the marinated chicken to the pan and mix it well, let the chicken get coated in the masala. As the chicken is cooking in the pan, add the (Step 2) masala paste that we made to the chicken. add little water in the blender to make sure you get all that amazing masala in the chicken. add little water to help the chicken cook, put a lid on the pan.

Step 6: After it has been cooking for 10 mins, add the Golden fried potatoes and eggs from Step 3. Mix it well. Check if the chicken is cooked, top it with some coriander and serve with rice! Enjoy this Recipe of Dak Bangla Chicken. Do try it and let us know how it went.
