Vegetable Vindaloo

A fiery spicy dish usually made with any kind of meat. It the masala which is known as Vindaloo. It is a curry dish that you must try if you haven’t.

Here we have Vindaloo, the vegetarian way. Do give it a try.


  • 1 large eggplant (diced)
  • 12-15 button mushrooms (halves)
  • 2 medium red onions (chopped)
  • 2 cups crushed tomato
  • 1 tablespoon vegetable oil
  • 1/4 cup coriander leaves (chopped)
  • 4 spring onions (chopped)
  • 2-inch cinnamon stick
  • 2 teaspoon black mustard seeds

Ingredients for the pasta:

  • 2 tablespoon white vinegar
  • 1 tablespoon vegetable oil
  • 6-8 cloves garlic (minced)
  • 1-inch ginger (chopped)
  • 2 tablespoon garam masala
  • 1/2 tablespoon turmeric
  • 1 teaspoon red chilli powder (Kashmiri)
  • 1 tablespoon mustard seeds (grounded)
  • 1 tablespoon coriander seeds (grounded)
  • 1 tablespoon cumin seeds (grounded)
  • 1 teaspoon sugar
  • Salt to taste


  • Make the masala paste by grinding all the ingredients together.
  • Marinate the mushrooms and eggplant in the masala paste and set aside for an hour.
  • In a large pot heat oil. Add the onions, and cook until golden brown in low flame.
  • Add the marinated vegetables and stir for 2-3 minutes.
  • Add the crushed tomatoes and cinnamon stick and bring to boil. Lower the heat and let it simmer. Cover the pot and allow the curry to cook for an hour, stir once in a while on between.
  • Once the vegetables are really tender. Garnish it with coriander leaves and spring onion.
  • Best enjoyed with pav.
