The Seniors Kitchen: Chettinad Mutton

Chettinad cuisine is very famous for its fiery hot, lip-smacking spicy dishes. This melt in the mouth mutton recipe is a surefire way to enjoy this superb cuisine.

Here’s our recipe for Chettinad Mutton.

 

Ingredients 

½  kg Mutton 

Curry Leaves 

1 Cup Ghee 

Water

 

For marinating: 

Jeera, Salt, Black Pepper, Garlic, Ginger. Grind these to make a paste. 

 

 Method: 

  • Jeera, Salt, Black Pepper, Garlic, Ginger. Grind these to make a paste. 
  • Marinate the mutton by coating it completely. Leave it for up to two hours or overnight. 
  • In a preheated pressure cooker Add one cup ghee once the Ghee is hot enough add the mutton pieces. 
  • Cook it for 15-20 minutes, Fry the Mutton till the water is completely dry. 
  • Once the water has dried and the ghee is separated, add some curry leaves and give it a nice stir. 
  • Now add two glasses of water, and pressure cook it for four whistles or up to 13 minutes.
  • Once you open the pressure cooker, you will see there is some water in there still, we need to cook the Mutton till the water completely dries up. 
  • There you have it –  Mutton Chettinad, Serve it with some bread.
