Weight Loss Soup is the perfect recipe to a healthier you in 2021.
If you are looking to drop a few pounds this low-calorie, high-fiber soup is healthy, flavourful, and really fills you up.

Cook Time: 2 hours
Total: 2 hours
Serves: 10 cups
Ingredients
2 cups chicken broth or vegetable broth (you could use low sodium)
3 cups tomato juice (fresh)
2 cups diced tomatoes
1 onion
2 cloves finely chopped garlic
I cup diced or sliced mushrooms
2 carrots peeled and sliced
1 zucchini diced
250 gms pumpkin (orange or white) diced
1 cup finely chopped green beans
½ cup kidney beans/ rajma soaked drained and rinsed and half pre- cooked
1 ½ cup shredded cabbage
1 tsp mixed dried herbs/ fresh herbs (basil, coriander, dill, rosemary etc.)
Salt and pepper to taste
Method
In a large frying pan sprayed with cooking spray, sauté garlic, onions, carrots, and mushrooms for about 5 minutes
In a large pot, combine sautéed garlic and vegetables with the remaining ingredients. Add two cups of water
Cook on medium for 2 hours, or until vegetables are crispy tender
Notes
*You can also use your preference of weight -loss veggies like dudhi (white pumpkin), bhopla (orange pumpkin), drumsticks, chopped spinach, red peppers, celery as variations
** De-seed the tomatoes before using
Pair the soup with a generous sprinkling of pepper and some crusty gluten- free focaccia!
